Ingredients
  • 2 cup Kale
  • 2 medium Sweet Potato
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Red pepper flakes
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add diced sweet potatoes and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until sweet potatoes are tender.
  4. Stir in kale and coconut milk. Cook for an additional 5 minutes.
  5. Season with salt, black pepper, and red pepper flakes.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve hot and enjoy!
