  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery Stalk
  • 2 minced Garlic Cloves
  • 4 cup Vegetable Broth
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Lemon Juice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  3. Add lentils, kale, vegetable broth, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 25 minutes or until lentils are cooked.
