Ingredients
  • 1.5 pound Potatoes
  • 2 cup Kale
  • 2 tablespoon Horseradish
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the potatoes, then cut them into small cubes.
  3. In a large pot, bring water to a boil and add salt. Cook the potatoes for about 10 minutes, until they are fork-tender.
  4. Meanwhile, wash the kale and remove the tough stems. Chop the leaves into small pieces.
  5. Drain the potatoes and transfer them to a baking dish.
  6. Add the kale, horseradish, olive oil, salt, and black pepper to the baking dish. Mix well to coat everything evenly.
  7. Place the baking dish in the preheated oven and roast for 20 minutes, or until the potatoes are golden brown and crispy.
  8. Remove from the oven and let it rest for 5 minutes before serving.
  9. Serve hot as a side dish.
