Ingredients
  • 200 gram Kale
  • 200 gram Chickpeas
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. Add the kale and cook for a few minutes until wilted.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Add the chickpeas, lemon juice, salt, and black pepper. Cook for an additional 5 minutes.
  5. Remove from heat and let the soup rest for 5 minutes.
  6. Serve hot and enjoy!
