Ingredients
  • 1 cup Black-Eyed Peas
  • 1 medium Onion, finely chopped
  • 2 clove Garlic, minced
  • 1 bunch Scallions, chopped
  • 2 tablespoon Parsley, chopped
  • 1 cup Flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Water
  • as needed for frying Vegetable oil
Instructions
  1. Soak the black-eyed peas in water overnight. Drain and rinse.
  2. In a food processor, blend the black-eyed peas, onion, garlic, scallions, and parsley until smooth.
  3. In a mixing bowl, combine the blended mixture with flour, baking powder, salt, black pepper, and water. Mix well.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides.
  6. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
  7. Serve hot as an appetizer or snack.
