  • 2 cup Oats
  • 1 cup Dates
  • 1/4 cup Almond Butter
  • 2 tablespoon Pumpkin Seeds
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Vanilla Extract
  • 1 pinch Sea Salt
Instructions
  1. In a food processor, combine pumpkin puree, oats, dates, almond butter, cinnamon, vanilla extract, and sea salt.
  2. Process until well combined and the mixture forms a sticky dough.
  3. Transfer the dough to a bowl and refrigerate for 1 hour to firm up.
  4. Once chilled, roll the dough into small balls.
  5. Press a pumpkin seed into the top of each ball.
  6. Store in an airtight container in the refrigerator. Enjoy!
