Ingredients
  • 500 gram Jerusalem artichokes
  • 1 medium-sized Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Fresh thyme leaves
  • 1 cup Heavy cream
  • 2 tablespoon Chopped parsley
Instructions
  1. Peel and chop the Jerusalem artichokes, onion, and garlic cloves.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and garlic cloves, and sauté until translucent.
  4. Add the chopped Jerusalem artichokes and cook for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until the Jerusalem artichokes are tender.
  7. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  8. Return the soup to the pot and stir in the heavy cream.
  9. Season with salt, black pepper, and fresh thyme leaves.
  10. Simmer for an additional 5 minutes.
  11. Serve hot, garnished with chopped parsley.
