Ingredients
  • 2 cup Red kidney beans
  • 1 cup Rice
  • 1 cup Coconut milk
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Thyme
  • 1 whole Scotch bonnet pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 stalks Green onions
  • 1 tablespoon Fresh parsley
  • 4 wedge Lime wedges
Instructions
  1. Rinse and soak the red kidney beans overnight.
  2. In a large pot, bring the soaked beans to a boil and simmer for 45 minutes or until tender.
  3. In a separate pot, cook the rice according to package instructions.
  4. In a skillet, sauté the onion, garlic, thyme, and Scotch bonnet pepper until fragrant.
  5. Add the cooked beans, coconut milk, salt, and black pepper to the skillet. Simmer for 10 minutes.
  6. Serve the beans and rice together, garnished with green onions, fresh parsley, and lime wedges.
