Ingredients
  • 2 cup White beans
  • 2 cup Spinach
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add white beans, vegetable broth, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in spinach and cook for an additional 5 minutes until wilted.
  4. Remove from heat and let the soup rest for 5 minutes.
