  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Eggplant
  • 2 medium Zucchini
  • 1 medium Bell Pepper
  • 4 medium Tomatoes
  • 2 medium Potatoes
  • 1 handful Fresh Basil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Red Pepper Flakes
  • 1 cup Water
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add eggplant, zucchini, bell pepper, and potatoes. Cook for 5 minutes.
  4. Stir in tomatoes, basil, salt, black pepper, and red pepper flakes.
  5. Add water, cover, and simmer for 30 minutes.
  6. Remove from heat and let it rest for 10 minutes before serving.
  7. Serve hot with crusty bread.
