Ingredients
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 3 clove Garlic
  • 2 medium Carrots
  • 2 stalk Celery
  • 1 large Bell Pepper
  • 2 medium Zucchini
  • 1 small Eggplant
  • 1 can Tomatoes
  • 2 cup Vegetable Broth
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 10 leaves Fresh Basil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.
  2. Add carrots, celery, bell pepper, zucchini, and eggplant. Cook for 5 minutes, stirring occasionally.
  3. Stir in the tomatoes, vegetable broth, dried basil, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove from heat and let the stew rest for 10 minutes.
  5. Serve hot, garnished with fresh basil leaves.
