  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 2 medium Bell peppers
  • 2 medium Zucchini
  • 1 medium Eggplant
  • 1 canned Tomatoes
  • 2 cup Vegetable broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant. Add carrots, celery, bell peppers, zucchini, and eggplant. Cook until vegetables are slightly tender. Stir in tomatoes, vegetable broth, oregano, basil, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes. Serve hot and enjoy!
