Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 medium Carrot
  • 2 stalk Celery stalks
  • 1 medium Zucchini
  • 1 medium Potato
  • 1 can Canned diced tomatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Cooked pasta
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrot, celery, zucchini, and potato. Cook for 5 minutes.
  4. Add canned diced tomatoes, vegetable broth, dried oregano, dried basil, dried thyme, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add cooked pasta and simmer for an additional 5 minutes.
  7. Serve hot, garnished with fresh parsley.
