Ingredients
  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 leaf Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 medium Zucchini
  • 2 cup Spinach
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Parmesan cheese (optional)
Instructions
  1. Rinse the lentils and set aside.
  2. In a crock pot, combine lentils, vegetable broth, carrots, celery, onion, garlic, tomato paste, oregano, basil, thyme, bay leaves, salt, and black pepper.
  3. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours, until lentils are tender.
  4. Stir in zucchini, spinach, and parsley. Cover and cook for an additional 15 minutes.
  5. Serve hot, optionally garnished with Parmesan cheese. Enjoy!
