Ingredients
  • 300 gram Sweet potatoes
  • 200 gram Carrots
  • 150 gram Bell peppers
  • 100 gram Onion
  • 4 gram Garlic cloves
  • 10 gram Ginger
  • 2 teaspoon Curry powder
  • 1 cup Coconut milk
  • 2 cup Vegetable broth
  • 1 can Chickpeas
  • 1 cup Spinach
  • 2 teaspoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.25 cup Fresh cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
  2. Add curry powder and cook for another minute.
  3. Add sweet potatoes, carrots, bell peppers, coconut milk, and vegetable broth. Bring to a simmer and cook for 20 minutes, or until vegetables are tender.
  4. Stir in chickpeas, spinach, lime juice, salt, and black pepper. Cook for an additional 5 minutes.
  5. Serve hot, garnished with fresh cilantro.
