Ingredients
  • 1 cup Israeli (Pearl) Couscous
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 1 cup Cherry tomatoes
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. In a medium saucepan, bring vegetable broth to a boil. Add Israeli couscous, reduce heat to low, cover, and simmer for 10-12 minutes or until couscous is tender.
  2. In a large skillet, heat olive oil over medium heat. Add red bell pepper, red onion, and garlic cloves. Sauté for 5 minutes or until vegetables are softened.
  3. Add cherry tomatoes to the skillet and cook for an additional 2 minutes.
  4. In a large bowl, combine cooked couscous, sautéed vegetables, fresh parsley, lemon juice, salt, and black pepper. Toss gently to combine.
  5. Let the dish rest for 5 minutes before serving. Enjoy!
