Ingredients
  • 500 gram Potatoes
  • 2 medium Onion
  • 4 cup Vegetable broth
  • 2 clove Garlic
  • 1 teaspoon Thyme
  • 2 piece Bay leaves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Peel and chop the potatoes and onions.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onions and garlic, and sauté until translucent.
  4. Add the potatoes, thyme, bay leaves, salt, and black pepper to the pot.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are tender.
  7. Remove the bay leaves and use an immersion blender to blend the soup until smooth.
  8. If the soup is too thick, add more vegetable broth or water to reach desired consistency.
  9. Serve hot, garnished with fresh parsley.
