Ingredients
  • 500 gram Rutabagas
  • 2 medium Onion
  • 2 tablespoon Olive oil
  • 1 tablespoon Brown sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Peel and dice the rutabagas.
  2. Boil the rutabagas in salted water for 20 minutes or until tender.
  3. Meanwhile, slice the onions and sauté them in olive oil until caramelized.
  4. Drain the rutabagas and return them to the pot.
  5. Add the caramelized onions, brown sugar, salt, and black pepper to the pot.
  6. Mash the mixture until well combined.
  7. Cook the mixture over low heat for 5 minutes to allow the flavors to meld.
  8. Serve the Irish rutabagas with caramelized onion garnished with fresh parsley.
