  • 14 ounce Canned chickpeas
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 0.5 cup Red onion
  • 0.5 cup Black olives
  • 0.25 cup Fresh parsley
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Lemon juice
  • 2 clove Garlic cloves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. Rinse and drain the canned chickpeas.
  2. In a large bowl, combine the chickpeas, cherry tomatoes (halved), cucumber (diced), red onion (thinly sliced), black olives, and fresh parsley.
