Ingredients
  • 500 gram Sweet Potatoes
  • 200 gram Red Lentils
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Garam Masala
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 2 tablespoon Fresh Coriander
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.
  2. Add turmeric powder, cumin powder, coriander powder, and garam masala. Stir well.
  3. Add sweet potatoes, red lentils, and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes or until sweet potatoes and lentils are tender.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.
  6. Serve hot, garnished with fresh coriander.
