Ingredients
  • 400 gram Eggplant
  • 300 gram Zucchini
  • 200 gram Bell Pepper
  • 150 gram Onion
  • 500 gram Tomatoes
  • 4 clove Garlic
  • 2 teaspoon Ginger
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala
  • 2 tablespoon Fresh Coriander
  • 1 teaspoon Salt
  • 2 tablespoon Oil
Instructions
  1. Heat oil in a pan and add chopped onion, garlic, and ginger. Saute until golden.
  2. Add the spices (turmeric powder, cumin powder, coriander powder, red chili powder) and cook for a minute.
  3. Add chopped bell pepper, zucchini, and eggplant. Stir well.
  4. Add chopped tomatoes, salt, and garam masala. Mix everything together.
  5. Cover the pan and let it simmer for 30 minutes.
  6. Garnish with fresh coriander.
  7. Serve hot with rice or bread.
