Ingredients
  • 500 gram Pumpkin
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 cup Coconut milk
  • 2 cup Vegetable broth
  • 1 teaspoon Curry powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lime juice
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté until onion is translucent.
  2. Add pumpkin, curry powder, cumin powder, coriander powder, turmeric powder, salt, and black pepper. Stir well.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until pumpkin is tender.
  4. Remove from heat and let it cool slightly. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  5. Return the soup to the pot and stir in coconut milk. Heat over low heat until warmed through.
  6. Stir in lime juice and adjust seasoning if needed.
  7. Serve hot, garnished with fresh cilantro.
