Ingredients
  • 1 head Cauliflower
  • 2 medium Potato
  • 1 medium Carrot
  • 1 cup Green Peas
  • 1 medium Onion
  • 3 clove Garlic
  • 1 inch Ginger
  • 2 medium Tomato
  • 2 tablespoon Cashews
  • 2 tablespoon Raisins
  • 2 tablespoon Cilantro
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Salt
  • 3 tablespoon Oil
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut out the core of the cauliflower and steam it for 10 minutes until slightly tender.
  3. In a pan, heat 2 tablespoons of oil and sauté the onion, garlic, and ginger until golden.
  4. Add the tomatoes, cashews, raisins, and all the spices. Cook for 5 minutes.
  5. In a separate pan, heat 1 tablespoon of oil and stir-fry the potatoes, carrots, and green peas until cooked.
  6. Combine the sautéed mixture with the stir-fried vegetables and mix well.
  7. Stuff the cauliflower with the vegetable mixture and place it in a baking dish.
  8. Bake for 30 minutes or until the cauliflower is tender.
  9. Garnish with cilantro and serve hot.
