Ingredients
  • 500 gram Cauliflower
  • 200 gram Spinach
  • 100 gram Red Onion
  • 150 gram Cherry Tomatoes
  • 2 teaspoon Olive Oil
  • 2 teaspoon Lemon Juice
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 20 gram Fresh Cilantro
  • 30 gram Roasted Cashews
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into florets and place them on a baking sheet. Drizzle with olive oil, cumin powder, coriander powder, turmeric powder, salt, and black pepper. Toss to coat evenly.
  3. Roast the cauliflower in the preheated oven for 20 minutes or until golden brown and tender.
  4. In a large bowl, combine the roasted cauliflower, spinach, red onion, cherry tomatoes, lemon juice, and fresh cilantro. Toss gently to mix.
  5. Sprinkle with roasted cashews and serve.
