Grate the potatoes and squeeze out the excess water.

Finely chop the onion, green chili, ginger, and cilantro.

In a mixing bowl, combine the grated potatoes, chopped onion, green chili, ginger, cilantro, chickpea flour, rice flour, turmeric powder, cumin powder, red chili powder, and salt. Mix well.

Heat vegetable oil in a frying pan over medium heat.

Take a portion of the potato mixture and shape it into a round pancake. Repeat with the remaining mixture.

Place the pancakes in the hot oil and cook until golden brown on both sides.

Remove the pancakes from the pan and drain on a paper towel to remove excess oil.

Serve hot with chutney or sauce of your choice.
