Ingredients
  • 500 gram Eggplant
  • 1 piece Onion
  • 2 clove Garlic
  • 2 piece Tomatoes
  • 2 tablespoon Parsley
  • 4 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Sugar
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving a 1/2-inch thick shell.
  3. Chop the eggplant flesh and set aside.
  4. In a pan, heat 2 tablespoons of olive oil and sauté the chopped eggplant, onion, and garlic until softened.
  5. Add the tomatoes, parsley, salt, black pepper, and sugar to the pan. Cook for another 5 minutes.
  6. Stuff the eggplant shells with the cooked mixture.
  7. Place the stuffed eggplants in a baking dish and drizzle with the remaining olive oil.
  8. Bake in the preheated oven for 45-50 minutes, or until the eggplants are tender.
  9. Let it rest for 10 minutes before serving.
  10. Serve hot and enjoy!
