  • 200 gram Carrots
  • 300 gram Potatoes
  • 150 gram Bell peppers
  • 200 gram Zucchini
  • 250 gram Apples
  • 400 gram Tomatoes
  • 150 gram Onions
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until onions are translucent.
  2. Add carrots, potatoes, bell peppers, zucchini, and apples to the pot. Stir well.
  3. Add tomatoes, vegetable broth, salt, black pepper, paprika, and cumin. Stir to combine.
  4. Bring the stew to a boil, then reduce heat to low and simmer for 30 minutes, or until vegetables are tender.
  5. Remove from heat and let the stew rest for 10 minutes.
  6. Serve hot, garnished with fresh parsley.
