  • 2 cup Black Eyed Peas
  • 1 medium Onion
  • 2 clove Garlic
  • 1 cup Breadcrumbs
  • 2 tablespoon Flaxseed Meal
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 4 piece Burger Buns
  • 4 leaf Lettuce
  • 4 slice Tomato
  • 4 sliced Onion
  • 4 piece Pickles
Instructions
  1. In a food processor, blend the black eyed peas, onion, garlic, breadcrumbs, flaxseed meal, smoked paprika, cumin, salt, and black pepper until well combined.
  2. Form the mixture into patties and refrigerate for 10 minutes.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook the patties for 4-5 minutes on each side until golden brown.
  5. Toast the burger buns.
  6. Assemble the burgers with lettuce, tomato, onion, pickles, and the black eyed pea patties.
  7. Serve hot and enjoy!
