Ingredients
  • 2 cup Black-eyed peas
  • 1 cup Rice
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 1 teaspoon Thyme
  • 1 teaspoon Smoked paprika
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 cup Vegetable broth
  • 2 stalks Green onions
  • 1 tablespoon Fresh parsley
  • 4 wedge Lemon wedges
Instructions
  1. Rinse the black-eyed peas and soak them overnight.
  2. In a large pot, combine the soaked black-eyed peas, rice, chopped onion, bell pepper, celery, garlic, thyme, smoked paprika, cayenne pepper, salt, black pepper, and vegetable broth.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the peas and rice are tender.
  4. Remove from heat and let it rest for 10 minutes.
  5. Garnish with chopped green onions, fresh parsley, and serve with lemon wedges.
