Ingredients
  • 500 gram Carrots
  • 1 cup Orange juice
  • 2 cup Vegetable broth
  • 2 tablespoon Honey
  • 1 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until onion is translucent.
  2. Add sliced carrots and cook for a few minutes.
  3. Pour in vegetable broth and orange juice. Bring to a boil, then reduce heat and simmer until carrots are tender.
  4. Remove from heat and let it cool slightly.
  5. Transfer the mixture to a blender and blend until smooth.
  6. Return the blended soup to the pot and stir in honey, salt, and black pepper. Heat over low heat until warmed through.
  7. Serve hot, garnished with fresh parsley.
