Ingredients
  • 500 gram Carrots
  • 2 teaspoon Ginger
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until fragrant.
  2. Add sliced carrots and vegetable broth. Bring to a boil and then reduce heat to simmer for about 20 minutes, until the carrots are tender.
  3. Remove from heat and let it cool slightly. Use an immersion blender or regular blender to puree the soup until smooth.
  4. Return the soup to the pot and stir in coconut milk. Season with salt and black pepper.
  5. Simmer for another 5 minutes to heat the soup through.
  6. Serve hot, garnished with fresh cilantro.
