Ingredients
  • 2 pound Pumpkin
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Nutmeg
  • 1 teaspoon Cinnamon
  • 2 tablespoon Maple syrup
  • 4 tablespoon Heavy cream
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the pumpkin in half and remove the seeds.
  3. Place the pumpkin halves on a baking sheet, cut side down.
  4. Drizzle olive oil over the pumpkin and sprinkle with salt, black pepper, nutmeg, and cinnamon.
  5. Roast the pumpkin in the oven for 40-45 minutes, or until the flesh is soft.
  6. Remove the pumpkin from the oven and let it cool for 10 minutes.
  7. Scoop out the flesh from the pumpkin and transfer it to a blender or food processor.
  8. Add maple syrup and heavy cream to the blender.
  9. Blend until smooth and creamy.
  10. Taste and adjust the seasoning if needed.
  11. Serve the homemade pumpkin purée as a side dish or use it as a base for other recipes.
