Ingredients
  • 1 can Black Beans
  • 1 small Onion
  • 2 cloves Garlic Cloves
  • 1 medium Red Bell Pepper
  • 1 cup Corn Kernels
  • 1 cup Breadcrumbs
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 4 pieces Burger Buns
  • 4 leaves Lettuce
  • 4 slices Tomato
  • 4 slices Avocado
Instructions
  1. Drain and rinse the black beans.
  2. In a large bowl, mash the black beans with a fork or potato masher.
  3. Finely chop the onion, garlic cloves, and red bell pepper.
  4. Add the chopped onion, garlic, bell pepper, corn kernels, breadcrumbs, ground cumin, chili powder, salt, and black pepper to the bowl with the mashed black beans.
  5. Mix everything together until well combined.
  6. Shape the mixture into patties.
  7. Heat olive oil in a pan over medium heat.
  8. Cook the patties for about 4-5 minutes on each side, until golden brown.
  9. Optional: Preheat the oven to 375°F (190°C) and bake the patties for an additional 10 minutes for a firmer texture.
  10. Toast the burger buns.
  11. Assemble the burgers by placing a patty on each bun, then topping with lettuce, tomato, and avocado slices.
  12. Serve and enjoy!
