Ingredients
  • 2 cup Split peas
  • 6 cups Vegetable broth
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery stalks
  • 2 cloves Garlic cloves
  • 1 teaspoon Liquid smoke
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 leaf Bay leaf
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Olive oil
Instructions
  1. Rinse the split peas under cold water.
  2. In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, celery, and minced garlic. Cook until vegetables are tender.
  3. Add split peas, vegetable broth, bay leaf, liquid smoke, smoked paprika, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until split peas are soft.
  4. Remove the bay leaf and blend the soup until smooth using an immersion blender or regular blender.
  5. Return the soup to the pot and heat for a few minutes. Adjust seasoning if needed.
  6. Serve the soup hot, garnished with fresh parsley.
