Ingredients
  • 500 gram Zucchini
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 4 tablespoon Fresh herbs (such as basil, parsley, thyme)
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 4 tablespoon Greek yogurt (optional)
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the zucchini and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the zucchini is tender.
  3. Remove from heat and let the soup cool slightly.
  4. Transfer the soup to a blender and blend until smooth.
  5. Return the soup to the pot and stir in the fresh herbs, salt, pepper, and lemon juice.
  6. Cook for an additional 5 minutes, then remove from heat.
  7. Serve hot, garnished with a dollop of Greek yogurt if desired.
