Ingredients
  • 400 gram Tomatoes
  • 14 ounce Cannellini Beans
  • 1 cup Rice
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic
  • 1 small Onion
  • 1 tablespoon Mixed Herbs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cup Vegetable Stock
Instructions
  1. Heat olive oil in a large pan over medium heat. Add minced garlic and chopped onion, sauté until translucent.
  2. Add rice and cook for 2 minutes, stirring constantly.
  3. Add vegetable stock, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add tomatoes, cannellini beans, and mixed herbs. Cook for an additional 5 minutes.
  5. Remove from heat and let it rest for 5 minutes before serving.
  6. Garnish with fresh herbs if desired. Enjoy!
