Ingredients
  • 500 gram Potatoes
  • 300 gram Carrots
  • 200 gram Zucchini
  • 150 gram Red bell pepper
  • 150 gram Yellow bell pepper
  • 2 teaspoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Wash and chop the vegetables into bite-sized pieces.
  3. In a large bowl, combine the vegetables, olive oil, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25 minutes or until the vegetables are tender and golden brown, stirring halfway through.
  6. Remove from the oven and let rest for 5 minutes before serving.
