Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1 cup Fresh herbs (such as parsley, mint, basil)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 cup Red onion, thinly sliced
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, add the rinsed quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
  3. In a large bowl, combine the cooked quinoa, fresh herbs, cherry tomatoes, cucumber, and red onion.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the quinoa mixture and toss to combine.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
  7. Serve the herbed quinoa salad chilled or at room temperature.
