Ingredients
  • 500 gram New Potatoes
  • 2 teaspoon Olive Oil
  • 2 tablespoon Fresh Herbs (such as rosemary, thyme, or parsley)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Wash and scrub the new potatoes.
  2. In a large pot, bring water to a boil and add salt.
  3. Add the new potatoes to the boiling water and cook for about 15-20 minutes until tender.
  4. Drain the potatoes and let them cool slightly.
  5. Preheat the oven to 200°C (400°F).
  6. Place the cooked potatoes on a baking sheet and gently press down on each potato to slightly flatten it.
  7. Drizzle olive oil over the potatoes and sprinkle with fresh herbs, salt, and black pepper.
  8. Roast in the preheated oven for about 20-25 minutes until golden and crispy.
  9. Remove from the oven and let them rest for 5 minutes.
  10. Serve the herbed new potatoes as a delicious side dish.
