In a mixing bowl, combine the chickpea flour, sesame seeds, flax seeds, chia seeds, dried mixed herbs, garlic powder, olive oil, water, and salt. Mix well until a dough forms.

Place the dough between two sheets of parchment paper and roll it out into a thin, even layer.

Remove the top layer of parchment paper and transfer the rolled dough onto a baking sheet.

Use a knife or a pizza cutter to cut the dough into desired cracker shapes.
