Ingredients
  • 500 gram Potatoes
  • 300 gram Carrots
  • 300 gram Zucchini
  • 200 gram Red Bell Pepper
  • 150 gram Red Onion
  • 4 teaspoon Olive Oil
  • 3 clove Garlic
  • 2 tablespoon Fresh Herbs (such as rosemary, thyme, parsley)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the potatoes, carrots, zucchini, red bell pepper, and red onion into bite-sized pieces.
  3. In a large bowl, combine the vegetables with olive oil, minced garlic, fresh herbs, salt, and black pepper.
  4. Toss until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
  7. Remove from the oven and let rest for 5 minutes before serving.
