Schnitzels originated in Austria and are traditionally made with meat, but this plant-based version with soy cutlets is a delicious and healthier alternative.

In a shallow bowl, mix the breadcrumbs, fresh herbs, salt, and black pepper.

In a separate bowl, prepare the egg replacer by following the instructions on the package.

Dip each soy cutlet into the flour, then into the egg replacer mixture, and finally coat it with the herb and breadcrumb mixture.

Heat vegetable oil in a frying pan over medium heat.

Fry the herb crusted soy cutlets for about 3-4 minutes on each side, or until golden brown.
