  • 200 gram Carrots
  • 200 gram Potatoes
  • 150 gram Celery
  • 100 gram Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 2 cup Mixed vegetables
  • 2 piece Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 cup Water
Instructions
  1. Heat olive oil in a large pot over medium heat. Add garlic and onion, cook until fragrant.
  2. Add carrots, celery, and potatoes. Stir and cook for 5 minutes.
  3. Pour in vegetable broth and water. Add tomato paste, mixed vegetables, bay leaves, thyme, salt, and black pepper. Stir well.
  4. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
  5. Remove the bay leaves and let the soup rest for 5 minutes.
  6. Serve hot and enjoy!
