Ingredients
  • 200 gram Carrots
  • 300 gram Potatoes
  • 150 gram Onion
  • 100 gram Celery
  • 400 gram Tomatoes
  • 150 gram Green Beans
  • 200 gram Corn
  • 2 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 3 clove Garlic
  • 2 piece Bay Leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add diced carrots, celery, and potatoes. Stir and cook for 5 minutes.
  3. Add vegetable stock, bay leaves, thyme, salt, and black pepper. Bring to a boil and then reduce heat to low. Cover and simmer for 30 minutes.
  4. Add chopped tomatoes, green beans, and corn. Cook for another 10 minutes or until the vegetables are tender.
  5. Remove bay leaves and serve the hearty vegetable stew hot.
