Ingredients
  • 200 gram Carrots
  • 200 gram Potatoes
  • 150 gram Onion
  • 100 gram Celery
  • 2 clove Garlic
  • 400 gram Tomatoes
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, celery, and carrots. Cook until onions are translucent.
  2. Add potatoes, tomatoes, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil.
  3. Reduce heat and let simmer for 20 minutes or until vegetables are tender.
  4. Remove bay leaves and thyme sprigs.
  5. Serve hot and enjoy!
