Heat vegetable oil in a large pan over medium heat.

Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant.

Add curry powder, turmeric powder, and cumin powder. Stir well.

Add chopped carrots, potatoes, cauliflower florets, green beans, and bell pepper. Cook for 5 minutes.

Pour in coconut milk and season with salt. Stir to combine.

Reduce heat to low, cover the pan, and simmer for 20 minutes or until the vegetables are tender.
