Ingredients
  • 4 cup Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Basil leaves
  • 4 tablespoon Heavy cream
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add chopped tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  4. Return the soup to the pot and stir in basil leaves. Simmer for an additional 5 minutes.
  5. Remove from heat and stir in heavy cream.
  6. Let the soup rest for 5 minutes before serving.
  7. Garnish with additional basil leaves if desired. Enjoy!
