Ingredients
  • 1 cup Cabbage
  • 2 medium Carrots
  • 1 small Red bell pepper
  • 1 medium Avocado
  • 4 slice Whole grain bread slices
  • 4 tablespoon Hummus
  • 2 teaspoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Shred the cabbage, grate the carrots, and thinly slice the red bell pepper.
  2. Mash the avocado with lemon juice, salt, and black pepper.
  3. Toast the bread slices.
  4. Spread hummus on one side of each bread slice.
  5. Layer the shredded cabbage, grated carrots, and sliced red bell pepper on top of the hummus.
  6. Spread the mashed avocado mixture on another bread slice.
  7. Place the avocado side on top of the vegetable layer.
  8. Cut the sandwich in half and serve.
