Ingredients
  • 2 cup Mixed beans
  • 1 medium Onion
  • 2 stalk Celery stalks
  • 2 medium Carrots
  • 4 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 2 leaf Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the mixed beans and soak them overnight in water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, celery, carrots, and minced garlic. Sauté for 5 minutes.
  4. Drain the soaked beans and add them to the pot.
  5. Pour in vegetable broth and add tomato paste, dried thyme, bay leaves, salt, and black pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 1 hour.
  7. Remove the bay leaves and garnish with fresh parsley.
  8. Serve hot and enjoy!
