Ingredients
  • 2 cup Black Beans
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 1 medium Red Bell Pepper
  • 1 medium Carrot
  • 1 stalk Celery Stalk
  • 4 cup Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Lime Juice
  • 2 tablespoon Fresh Cilantro
  • 1 medium Avocado
  • 1/2 cup Tortilla Chips
Instructions
  1. Rinse and drain the black beans.
  2. In a large pot, heat some olive oil over medium heat.
  3. Add the onion and garlic cloves, cook until softened.
  4. Add the red bell pepper, carrot, and celery stalk, cook for a few more minutes.
  5. Stir in the black beans, vegetable broth, diced tomatoes, cumin, chili powder, smoked paprika, salt, and black pepper.
  6. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes.
  7. Using an immersion blender or a regular blender, blend about half of the soup until smooth. You can also leave it partially blended for a chunkier texture.
  8. Stir in the lime juice and fresh cilantro.
  9. Serve the soup hot, topped with diced avocado and crushed tortilla chips.
